getting ready to leave
my middle son made the cake and I showed him simple tweeks

Now to serve place a small slice of cake in a pretty stem crystal glass , pour the custard around the cake,then add fresh grated nutmeg on top. I usually serve this desert around Christmas time and since this cake is so rich small servings are better. When making my cake I use a canned lite coconut milk + fresh coconut water from a fresh coconut. For the icing I also use the coconut water. So it takes only one large coconut for both cake and icing. For flavorings I use half measuring of clear white vanilla and half almond flavoring but never imitation flavorings.
Note : For finding the right coconut look for a coconut that is heavy in liquid. I usually take two coconuts and see the difference in weight til I find the heaviest and shake the coconut to see if there is a lot of liquid in the coconut. After a while this trick is the best in figuring out which coconut to purchase.
