My grandaughter was not about to be left out, so her daddy took her on a 30 minute ride ,no fear what so ever with horses. Both girls have been riding for a while.

She was riding her bike following me outside play time,and she got knocked off her bike coming after me. She rode her bike right into the bar ledge outside. Cookie Monster and her granddee-mama made it all better.

Boiled Custard

7 minute frosting with coconut

      Now to serve place a small slice of cake in a pretty stem crystal glass , pour the custard around the cake,then add fresh grated nutmeg on top. I usually serve this desert around Christmas time and since this cake is so rich small servings are better. When making my cake I use a canned lite coconut milk + fresh coconut water from a fresh coconut. For the icing I also use the coconut water. So it takes only one large coconut for both cake and icing. For flavorings I use half measuring of clear white vanilla and half almond flavoring but never imitation flavorings.

Note : For finding the right coconut look for a coconut that is heavy in liquid. I usually take two coconuts and see the difference in weight til I find the heaviest and shake the coconut to see if there is a lot of liquid in the coconut. After a while this trick is the best in figuring out which coconut to purchase.

Sometimes I add a good coconut rum to the cake before adding the icing,or more coconut water. For children I do not add the rum, I just make a smaller cake with no rum added.
