This has got to be the best cornmeal ever. In the south we only use white cornmeal. But in the SoCal area they use a yellow cornmeal which was hard to get use to but it is ok now. I am accustom to using yellow cornmeal with my Ethnic meals. I grew up with TexMex meals when I was a kid, and none of my friends even tasted that kind of food in the East Tennessee town I was raised. Everytime I had a slumber party my mom would make her mexican casserole and my friends went crazy over her dinners . My mom was born in Willspoint ,Texas so she loved the foods from Texas and especially Tamales which are my favorite!
